Matcha Latte Chocolate Muffins

Ingredients:

  • 1 cup of almond flour ( If using  coconut flour, use 1/4 cup; I personally prefer almond for baking)
  • 2 teaspoons Matcha Muscle Culinary
  • 1 teaspoon baking powder
  • ½ teaspoon vanilla extract
  • ½ teaspoon maple extract
  • 1 teaspoon cinnamon
  • ½ teaspoon monk fruit sweetner (optional)
  • ¼ teaspoon salt
  • 1 cup unsweetened full fat coconut milk
  • 3 tablespoons oil of melted coconut milk
  • 1/2 bar of eating evolved dark chocolate; break into little pieces
  • Frosting (optional)

Frosting

  • 2-3 tablespoons of monk fruit
  • 1/3 cup refined coconut oil or butter
  • 1 tablespoons non-dairy milk
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons of coconut flower (may need to add more to thicken consistency)
  • 1 pinch salt
  • 1/2 teaspoon of matcha
  • Blend in a blender!

Instructions

  1. Preheat your oven to 350ºF and grease muffin pan with coconut oil.
  2. Combine all ingredients into a food processor or large bowl expect chocolate; combine ingredients gently but well (using a food processor, use low speed.
  3. Add in chocolate
  4. Divide the batter between the muffin pan; fill about 3/4 of the way,
  5. Bake for about 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let cool completely; about 5-10 mins
  6. Icing optional!
  7. I got real crazy and also added Justin’s Hazelnut Butter on top!
